Grub Approved Recipe: Burrata Salad With Whole Roasted Garlic and Prosciutto


Want a light meal that contains flavors only found in large feasts? Cloves of garlic and pieces of dry-cured ham combine in a salad that can be adjusted however you see fit. Want some extra flavor? Throw in some extra mozzarella balls!

Part of the fun in a salad is coming up with your perfect balance of ingredients, and this dish gives you a lot to play with.

Test out this Drool Worthy Daily salad to feel like salad-eating royalty.

Makes: 4 Salads

You’ll Need:

  • 8 cups chopped romaine
  • 8 ounces mozzarella balls
  • 1/2 cup shelled pistachios
  • 1/2 red onion, thinly sliced
  • 1 cup roasted sliced tomatoes*
  • 1/4 cup whole roasted garlic*
  • 3 ounces prosciutto, torn into pieces
  • Croutons (optional)
  • Salt and pepper, to taste
  • Olive oil
  • Balsamic glaze**

*You can make these yourself, or I got mine at my grocery’s olive bar
**Make yourself by reducing 1/2 cup balsamic vinegar in a pot on the stove to 3 tablespoons (and let cool) OR buy it (I find mine next to the balsamic vinegar).
