Makes: 4 Salads
- 8 cups chopped romaine
- 8 ounces mozzarella balls
- 1/2 cup shelled pistachios
- 1/2 red onion, thinly sliced
- 1 cup roasted sliced tomatoes*
- 1/4 cup whole roasted garlic*
- 3 ounces prosciutto, torn into pieces
- Croutons (optional)
- Salt and pepper, to taste
- Olive oil
- Balsamic glaze**
*You can make these yourself, or I got mine at my grocery’s olive bar
**Make yourself by reducing 1/2 cup balsamic vinegar in a pot on the stove to 3 tablespoons (and let cool) OR buy it (I find mine next to the balsamic vinegar).
