Logan Locascio

“I’m a fan of balance when it comes to food.  I require both superb quality that would please kings and immense quantities that would frighten small children.”

What would be your last meal in Gainesville?
The first fish I ever loved: Ballyhoo’s smoky cedar-plank salmon.

What’s one thing on your foodie bucket list?
Accompany Andrew Zimmern–the man, the myth, the legend of Bizarre Foods–on a cross-country farmers market tour.

If you could cook one food perfectly, what would it be?
Scrambled eggs.  I’ve been fine-tuning my (in)famous “Eggs Logán” for years now, usually including spinach, mushrooms and whatever meat I can find in the fridge.
